GREEN BAY, WI (WTAQ-WLUK) — A new culinary center opened its doors in Green Bay Thursday.
The “Rooted in Culinary Center of Excellence” is located near the Brown County Jail. The non-profit moved to its new space in May. It’s first-of-its-kind center, hoping to improve heath and reduce food waste.
The center will gather surplus food from farms, manufacturers, distributors, retailers, restaurants, and community partners. That food is then re-distributed or transformed into meats for those experiencing food insecurity.
“People are always surprised by the quality of the food that we’re able to make but many of our food recovery partners are quite high so we end up working with really gorgeous materials all the time. I mean, this is restaurant quality food that we’re putting out into the community.” said ‘Rooted In’ Director of Programs Alex Galt.
‘Rooted In’ was able to afford the move in part due to being awarded a $63,000 donation from Give BIG Green Bay earlier this year. Freedom House also donated a van to ‘Rooted In’ this February.
‘Rooted In’ began operations in 2023. It expanded into meal production in 2024.
